This salad is a family favorite around our house. It’s a sign that summer has finally arrived; we always joke its not summer until our first watermelon salad. I love to pick fresh tomatoes off the vines in our garden and add those to our salad. There is something so satisfying about actually being able to grow and use your own veggies. The combination of the salty feta, sweet watermelon, and the creamy avocado make for perfect balance on top of a bed of crispy romaine. We will eat this as a side most night or add some grilled chicken on top for an entree on hot summer nights. 

Salad Serves 6:

2 Heads Romaine

4 cups Watermelon cut into cubes

1 cup Feta Cheese

1 cup Cherry Tomatoes halved

 2 Avocado cubed

 3 Green Onions diced

 1/3 cup Chives diced

When serving, I like to lay my topping over my bed of romaine lettuce in rows. First, my tomatoes, then the watermelon, and so on and so forth. I love seeing the rows of colorful toppings on top of the salad. 

Dressing:

For the dressing I make a simple lemon vinaigrette. I like the flavors of the ingredients to really show through so I like to keep the dressing light. The acidity from the lemons adds a perfect balance.

 1 and a 1/2 Lemons Juiced

2/3 cup Olive Oil

2 Tablespoons dijon mustard

 1 teaspoon Salt

 1 teaspoon pepper

To Serve:

Add all the ingredients into a bowl and whisk them together. When ready to serve, drizzle the dressing over the top before tossing it. Enjoy!
